I love cookies--and what better way to introduce some of my favorite authors than to have them share a recipe--Patricia Preston is one of those wonderfully fun people and I am glad she is here! Welcome!
Thanks to Mary for having me over to share a cookie recipe! The operative term here, folks, is NO BAKE!!! As far as I’m concerned, the less work it is, the better. That’s not to say this doesn’t call for some upper body strength. Wait until you start trying to mix the peanut butter and corn syrup. LOL.
NO BAKE CORNFLAKE PEANUT BUTTER COOKIES
6 cups corn flakes
1 cup sugar
1 cup light corn syrup
1 cup creamy peanut butter
1 teaspoon vanilla
Have a large bowl and lined cookie sheet handy.
Heat sugar and corn syrup on medium heat until sugar dissolves.
Remove. Add peanut butter and stir. Add vanilla and stir.
Put cornflakes in a large bowl and pour peanut butter mixtures over cornflakes.
Stir gently with wooden spoon or spatula so not to crush cornflakes.
Using a large spoon, drop spoonfuls of mix onto cookie sheet lined with wax paper.
Put aside to cool and set. Takes about 30-45 minutes. Serve.
Store in airtight container.
