I am loving this series of cookie recipes---today I have the gracious Katherine Bone, she writes historical romance, (Pirates! You have to check out her facebook or twitter--she talks pirate speak) . Welcome her and have fun with this cookie recipe!
2 1/4 cup all-purpose flour
1/2 cup sugar
1/2 cup shortening
1/2 darki molasses
1 1/2 tsp. cinnamon
1 tsp. double-acting baking powder
1 tsp. ginger
1 tsp. ground cloves
1/2 tsp. nutmeg
1/2 tsp. baking soda
1/2 tsp. salt
Into a large bowl, measure all ingredients, except the frosting. With mixer, beat ingredients until well blended. On lightly floured surface, roll dough 1/8" thick. With cookie cutters, cut out gingerbread men. Place cutouts 1/2" apart on cookie sheets. Reroll trimmings and continue cutting out cookies.
Bake for about 8 minutes in preheated oven at 350 degrees. Remove cookies to rack and cool.
5 Tbsp. Meringue powder
1 pound Confectioner's sugar
Scant 1/2 cup water
Using an electric mixer on low speed, beat the meringue powder, confectioner's sugar and scant 1/2 cup water for about 10 minutes. If the icing is too thick, add an additional teaspoon of water; if icing is too thin, continue beating it for 2 to 3 minutes to achieve thicker consistency.
Ice cookies. Let stand for at least 3-4 hours then add to storage container.
